Snacks recipes of Rajasthan

Got bored with enough of Diwali sweets every year? Try some of the best Indian snacks from the cuisine of Rajasthan this Diwali. The food of Rajasthan is equally popular for its sweet essence and snacky flavour. Barsa Dolla, Jodhpuri Pakoda and Surti Plaza – the snacks of Rajasthan – are among the most delicious Indian dishes from the vegetarians. Try the following recipes of Barsa Dolla, Jodhpuri Pakoda and Surti Plaza, shared by the master chef of Khandani Rajdhani, this Diwali 2014.

 

Recipe of Barsa Dolla

Ingredients

1cup Maida

Chopped Beans

Green Peas

2tsp Ghee

1tsp Jeera

1tsp oil

1/2 tsp Ginger paste

1/2 tsp Green chili paste

1 pinch asafetida

1/2 tsp Turmeric powder

1/2 tsp carom seeds

1tsp sugar

1 full lemon

1tsp oil

Salt to taste

 

For the dough

2 cups plain flour (maida)

1 tbsp melted ghee

Salt to taste

1/4 tsp oil for kneading

 

How to cook 

Mix all the ingredients of the dough in a bowl

Add water to the mix to make firm dough

Cover the dough and keep it aside for 15 minutes

Knead the dough with some oil to make it feel smooth

Cover it with a piece of wet cloth for some time

Head some oil in a pan

Add cumin seeds and asafoetida to the pan

Add the ingredients, required for stuffing, to the pan

Roast them till light brown. Then, remove the pan from heat

Stuff the center of the doughs with some filling

Heat oil in a pan with deep pit

Once the oil is heated, keep the flame moderate

Deep fry the stuffed doughs on both sides till they turn golden brown     

 

Recipe of Jodhpuri Pakoda

Ingredients

Green Chillies – 8/9 large

Oil for Deep Frying

For batter

Gram flour (besan) – 1 cup

Turmeric powder – 2 pinches

Salt to taste

Water as required for filling:

Potatoes – 3 large ones

Red chilli powder – 1 tsp

Coriander leaves chopped fine – 1/2 Salt to taste

 

How to cook

Do vertically slice green chillies on one side

Remove seeds from inside and keep the chillies aside

Boil potatoes in salted water

Peel the skin off, and mash the potato well

Mix chilly powder and coriander leaves with potato mash

Make a thick batter of the gram mixing salt and turmeric powder

Stuff the chillies with spiced potato mash

Dip the stuffed chillies in the batter and leave them into a pan with preheated oil

Deep fry them till golden brown

Serve Jodhpuri Pakoda with sweet imli (tamarind) chutney

 

Recipe of Surti Plaza

Ingredients

For Stuffing

Chopped Beans

Green Peas

2tsp Ghee

1tsp Jeera

1tsp oil

1/2 tsp Ginger paste

1/2 tsp Green chilli paste

1 pinch asafetida

1/2 tsp Turmeric powder

1/2 tsp carom seeds

1tsp sugar

1 full lemon

2 tsp Coriander chopped

 

For Garnish

Nylon sev

Tomato ketchup

Green Chutney

Grated coconut

Salt to taste e

 

For the dough

2 cups plain flour (maida)

1 tbsp melted ghee

salt to taste

1/4 tsp oil for kneading

 

How to cook 

Mix all the ingredients, required for the dough, in a bowl

Use water as much as needed to make firm dough

Cover the dough and keep it aside for 15 minutes

Knead the dough with some oil till it feels smooth

Heat some ghee in a pan

Mix all the ingredients required for stuffing

Add the mixture to the pan

Roast it a little brown, and then keep it aside

Make small balls from the dough

Roll the balls into flat roties and cut them into large square shape

Place one square piece of the roti on a flat, plain surface

Put some filling in the middle or center

Place another square piece over it and then seal the edges of both pieces

Heat oil for frying in a deep pan, and keep the flame moderate after some time

Deep fry till golden brown, and then remove them from the pan

Let them cool slightly, and then cut them in half from one corner to the other

Garnish them with grated coconut, green coriander leaves and tomato ketchup

Serve a plate of Surti Plaza with green chutney and some sev
